Cooked entirely over a 300-year-old pimento wood bar-be-que - known locally as a “Drying Yard”, this al fresco experience is a soulful blend of rustic elegance and elevated Caribbean flavor.

Every dish is crafted with fresh, seasonal, locally sourced ingredients, prepared using ancestral Jamaican cooking techniques and served with signature Rousseau flair. Enjoy artisanal cocktails, local small-batch ice cream, and the warm, welcoming spirit of country living - reimagined through a luxury lens.
