Cooked entirely over a 300-year-old pimento wood bar-be-que - known locally as a “Drying Yard”, this al fresco experience is a soulful blend of rustic elegance and elevated Caribbean flavor.

Every dish is crafted with fresh, seasonal, locally sourced ingredients, prepared using ancestral Jamaican cooking techniques and served with signature Rousseau flair. Enjoy artisanal cocktails, local small-batch ice cream, and the warm, welcoming spirit of country living - reimagined through a luxury lens. This is more than a meal, it’s a celebration of culture, connection, and culinary storytelling.

  • Gather at the hearth for an elegant, slow-paced outdoor dinner cooked over live fire. Each course tells a story, from native traditions to modern Caribbean creativity. Enjoy vibrant flavors, family-style platters, and acoustic sounds in the open air. Devices down, spirits up - this is your moment to truly connect.

  • Unwind with a digestif and local treats like artisan chocolate, Blue Mountain coffee, or a hand-rolled Jamaican cigar. Lounge beneath the stars, dance to vintage sounds, shop island treasures, or cozy up inside the home with a game of chess. This is your golden hour.
