CELEBRATORY LIVE-FIRE DINING

These are pure dining experiences where we cook live in front of guests on a traditional Outdoor Kitchen and serve (more like a restaurant’s Chef’s Table)... they can watch and engage with us throughout. We come to the table and speak from time to time.

  • An alfresco dining experience featuring elevated rural Jamaican cooking prepared entirely over live fire on a 300-year-old pimento BBQ

  • A celebration of freshly harvested local ingredients simply and elegantly prepared, served family-style at communal tables to encourage conversation and connection

HANDS ON - TASTINGS & CLASSES

These tastings, workshops and classes are taught in person by either the sisters or a renowned expert. The tastings and workshops are of shorter duration and designed to explore culture, terroir and traditions of the island.

  • A spirited journey through the history of Caribbean rum, exploring nuances of flavors, aromas, and legacy behind each bottle, paired with complementary foods.

  • Island-hopping mixology class featuring different islands' rum punch traditions, accompanied by classic Jamaican bar food.

  • A tasting journey through Jamaica's world-class Blue Mountain coffee and chocolate, including history, preparation demonstrations, and sampling of premium local products.

Flavors of the Jamaican Soul 

These involve some level of instruction, demonstration & historical or heritage narrative but guests are more treated as observers so they are not obligated to participate - but can if they so wish. After the demo portion they sit to dine - These are full service meals that will be served family style at long tables by professional wait staff

  • An elevated gastro-jerk exploration that traces the authentic history and techniques of Jamaica's most famous culinary tradition, from its origins to modern interpretations

  • An energizing walk through the verdant hills surrounding Rockfield, culminating in a classic Jamaican country breakfast cooked over live fire

MASTER CLASSES & WORKSHOPS

These all take place on site at Rockfield and are centered around reviving or preserving old time traditions with local or regional experts or alternately, master classes with the sisters.

  • Caribbean Potluck & Provisions 101: Learn modern Jamaican interpretations of traditional dishes based on their award-winning cookbook.

  • Dive into traditional techniques for classic Jamaican family dishes including pressed plantain, saltfish preparation, homestyle rice and peas, and traditional desserts
